I noticed it wasn't an option in BeTheme options. I had to add this to the custom CSS but perhaps it could be added in a future update:
#Top_bar .search_wrapper ::-webkit-input-placeholder { color: #fff !important; }
With certain colors, the default text color (gray) just doesn't show up.
